Roasted Pumpkin, Cranberry and Giant Couscous Salad with Bulgogi & Orange Dressing

  • 225g Korean Bulgogi
  • 225g orange juice
  • 1kg roasted pumpkin or butternut squash, 2cm cubes
  • 600g cooked giant couscous
  • 100g thinly sliced red onion, fried
  • 50g baby spinach / mixed salad
  • 25g dried cranberries to garnish
  • 25g chopped walnuts/pecans* to garnish

*May be omitted.


  1. In a large container, toss the salad ingredients with Korean Bulgogi paste and orange juice; mix well.
  2. Garnish and serve
